Circles in Motion!
Alex Dilling used to pipe this tuile by hand. This ‘sexy abstract swirl’ was developed by Alex, requiring him to pipe it perfectly every evening. Achieving this level of precision each time was very time-consuming, and nowadays, every second in the kitchen is precious. This led us to the idea of incorporating the swirl into a mold. Alex finished this dish to resemble a black truffle, served atop a veal sweetbread larded with black truffle and gently smoked. It’s then roasted in salted butter and glazed with its own jus.
