Crown or sandwich?
Yes, we already used the scallop shell as inspiration for the Scallop Pressing Kit and Scallop Madeleine Mold. However, we felt like we need to do something more with the radiating ribs. Its iconic shape is perfect for a tuille. Use the tuille on to crown a seared scallop or use two as a sandwich with scallop tartare in between.
