Serving crispy shells
Håkon Solbakk wanted to make the shell and tail of the langoustine edible. The edible shell and tail combines presentation with functionality. When serving langoustine as a bite, the mold allows chefs to create a version that can be picked up by hand.
This Langoustine Tuille Mold consists of Cutters and a Tuille Mold to create a realistic langoustine shell. In the step-by-step recipe that comes with the order, Håkon shares how to recreate the perfect langoustine color.
