Sweet like honey!
This mold has been a highly requested shape for us. That’s why we’ve teamed up with Thibaut Hozajner, owner of the Sweet Sage in Lausanne. This flower, with its honey pattern, is an incredibly beautiful shape that can be used in many different ways. Make a delicious honey batter, curve the flower upward, and give your dish an extra dimension. The honey pattern adds an additional 3D feeling, which you can also impart to your dish by placing this tuille.

About the Chef
Thibaut Honajzer, a pastry chef with diverse experience in France, London, New York, and Switzerland, he met Chef Anne-Sophie Pic in 2018, and shared her passion for the vegetal cuisine. After spending five years with her group, including four years at a her two-Michelin-starred restaurant in Lausanne, he opened his own pastry shop, The Sweet Sage, in Lausanne in 2023. Here, he showcases his creativity and refined taste, highlighting the essence of each ingredient. This marks the start of a new adventure where he can share his culinary pastry world with others.
