Mindful Gastronomy
This mold was created in our TestKitchen. We came up with the idea to make stained glass edible and flavored. Thus, we created a form inspired by a Buddha. This allowed us to incorporate various spices and ingredients into the stained glass, such as lemongrass, lime, red, and green pepper.
Ingredients for the ‘stained glass’ recipe
250 grams of water
100 grams of centrifuged juice of a vegetable/fruit
120 grams of caster sugar
20 grams of icing sugar
20 grams of glucose
25 grams of potato starch
Method
Mix all ingredients in a saucepan. Heat until thickened, stirring constantly as it can become too hot. Once heated, you can optionally add food coloring powder. Allow to cool and transfer to a piping bag. Use immediately. Pipe it into your tuille mold on a silicone baking mat. Let the tuille, including the ‘stained glass’ mixture, dry in a drying cabinet at 70 degrees Celsius for approximately 12 hours. Good luck!
