Introducing the new “Quail Forestiere” mold in collaboration with Alex Dilling. This successor to the “Hunter Chicken” boasts a modern relief while retaining the droplet-like shape. Crafted with dedication and enriched with ingredients like black truffle, quail, and smoked duck breast, this mold facilitates the creation of an exquisite dish. Recognizing the need for an interior mold during development, we recommend ordering both molds together for the perfect result. Alex’s insight also led to easier shaping of the Hunter Chicken’s interior, making it a two-in-one solution.

About the Chef
Chef Alex Dilling was the former chef of the renowned restaurant The Greenhouse** in London. Alex is considered one of the most technically skilled chefs in the world. When Alex came up with his idea for the ‘Hunter Chicken’ mold he asked us to help him out. Many of you could only guess how this amazing dish was made, the secret: a lot of skill, perseverance and a little help of a custom mold.
