Spiral of Shadows

Chef Jonnie Boer once shared that his team used to handcraft the spirals for this dish daily, meticulously aligning two strips of silicone to create a perfect spiral for each guest. Today, a tailor-made silicone mold not only saves valuable time but also guarantees precision—ensuring that every guest receives the exact intended portion.

The reason this mold is limited to a single shape is clear: delicacy. The spiral must be gently removed without breaking, and by peeling away the corners, each shape can be released intact and beautifully presented.

With the purchase of this mold, you’ll receive a printed recipe card featuring two signature creations from the chefs of De Librije***: a foie gras terrine and a turmeric mousse—dishes that reflect the legacy of one of the Netherlands’ most visionary kitchens.
