Spiral of Shadows

Chef Jonnie Boer shared that his team used to make the spirals for this dish by hand every day by carefully aligning two strips of silicone into a perfect spiral for each single guest. In this case, a tailor-made silicone mold not only saves a significant amount of time but also ensures that every guest receives exactly the right amount.

There is a clear reason why this mold doesn’t have more shapes, and that is because you have to gently remove the spiral from the mold without breaking it. By peeling away the corners, it ensures that each shape will come out as you’d like.

By purchasing one of these molds, you’ll receive a hardcopy recipe card with a recipe for a foie gras terrine and a recipe for a turmeric mousse developed by none other than the chefs of The Librije***.
