Catch of the day
The Truffle Stencil was our starting point. This time, we looked for an ingredient where texture and contrast define its identity. The result is the Mackerel Stencil, inspired by the distinctive pattern of a mackerel’s back. It recreates the fish markings and makes an ingredient that often loses its identity on the plate instantly recognizable. Spread a dark base layer, bake it shortly and then finish with a contrasting top layer.
