After extensive testing on size and height, this mold was developed to give the classic éclair a different proportion. Our Eclair shape is thin and not too high. During baking it rises well and keeps its structure. The result is a clean éclair with a balanced volume and a clear silhouette.
Use it for traditional choux, modern interpretations or even savory applications. The format works with many types of fillings and preparations. On our recipe page you will find a standard choux recipe developed specifically for use with silicone molds.
