Mescolare l'albume, l'olio di girasole, lo zucchero, la farina e il sale con l'anguilla. Raffreddare la pastella per 15-30 minuti. Preriscaldare il forno a 160-170\u00b0C (ventilato). Distribuire la pastella in modo sottile nel Tuille di osso di anguilla Mold. Cuocere per 8-12 minuti fino a quando non saranno dorati e croccanti. Togliere dalla teglia subito dopo la cottura e modellare finch\u00e9 \u00e8 caldo (ad esempio, con un mattarello per ottenere una forma curva).
