Mike Klaassen, ehemaliger Bocuse d'Or-Kandidat, hatte die brillante Idee, eine Farce Mold aus Wolfsbarsch und Steinbutt zu kreieren. Arjan Speelman, Chefkoch und Manager des Ciel Blue** im Hotel Okura Amsterdam, gab ihm die M\u00f6glichkeit, diese Idee weiterzuentwickeln. Derzeit ist Mike Chef de Cuisine im Ciel Blue, nachdem er bereits in jungen Jahren umfangreiche Erfahrungen in Restaurants wie dem Restaurant Amber** in Hongkong und The French Laundry*** in Kalifornien gesammelt hat.<\/p>\n\n\n\n
